Ingredients:

  • 1 tbsp olive oil

  • 1 clove fresh garlic, minced

  • 1 yellow onion, diced

  • 5 cups chicken stock

  • 1/4 cup rice, uncooked

  • 2 chicken breast, shredded

  • 1/2 cup lemon juice

  • 2 eggs

  • 1 tbsp dil

  • 1 tsp onion powder

  • 1/2 tsp paprika (optional)

  • 1 tsp salt

  • 1 tsp pepper

Directions:

  1. Add oil to a large stock pot

  2. Add onion and garlic on medium heat until onion becomes translucent about 3-5 minutes

  3. Pour in chicken stock. Bring to a boil

  4. Add uncooked rice and reduce to a simmer, about 10-15 minutes or until the rice is cooked

  5. Add shredded chicken

  6. Temper the eggs, mixing a bit of the stock into the eggs constantly stirring so they don't scramble. Once enough stock is added, combined into the stock pot.

  7. Add spices

  8. Enjoy!

*Note: Due to the rice the soup broth may be soaked up during refrigeration.
