Ingredients:
1 tbsp olive oil
1 clove fresh garlic, minced
1 yellow onion, diced
5 cups chicken stock
1/4 cup rice, uncooked
2 chicken breast, shredded
1/2 cup lemon juice
2 eggs
1 tbsp dil
1 tsp onion powder
1/2 tsp paprika (optional)
1 tsp salt
1 tsp pepper
Directions:
Add oil to a large stock pot
Add onion and garlic on medium heat until onion becomes translucent about 3-5 minutes
Pour in chicken stock. Bring to a boil
Add uncooked rice and reduce to a simmer, about 10-15 minutes or until the rice is cooked
Add shredded chicken
Temper the eggs, mixing a bit of the stock into the eggs constantly stirring so they don't scramble. Once enough stock is added, combined into the stock pot.
Add spices
Enjoy!
*Note: Due to the rice the soup broth may be soaked up during refrigeration.
