Ingredients:
1/2 cup unsalted butter, softened
1 1/4 cups granulated sugar
2 eggs
1/2 cup buttermilk (link below how to make)
3 large overripe bananas
2 1/2 cups all purpose flour
1 tsp baking soda
1tsp salt
Directions:
Preheat oven to 350F and line baking sheet with parchment
Cream butter and sugar in a large bowl (with paddle if using electric mixer) until light and fluffy (aprox. 2 mins)
Add-in eggs until combined
Add-in buttermilk, and bananas until combined
Fold in dry ingredients (flour, baking soda, salt) until combined
Pour finished batter into prepared pan
Bake for 30-45 mins or until toothpick comes out with a few crumbs if you like it a little gooey (my personal favorite way) or till it is pulled out clean for a fully baked loaf
