This breakfast burrito is a hearty, high-protein way to start your day—perfect for busy mornings or easy meal prep. Packed with fluffy scrambled eggs, savory protein like chicken sausage or bacon, crispy hashbrowns, and melty cheese, all wrapped in a warm tortilla, this easy breakfast burrito is both satisfying and customizable.

Ingredients:

  • 4 eggs

  • ⅓ cup low fat cottage cheese

  • 1 tsp salt

  • ½ tsp pepper

  • 1 tsp garlic powder

  • 1 pack chicken sausage (*I used jalapeno flavor)

  • 1 can black beans, drained

  • 5 hashbrowns, cooked

  • Shredded cheese

  • Spinach

  • 5 flour tortillas

Directions:

  1. In a large bowl whisk together eggs, cottage cheese, salt, pepper, and garlic powder

  2. In a large skillet on medium heat scramble eggs, and set aside once done

  3. Slice chicken sausages in half horizontally

  4. Cook on medium heat in a large skillet for 5-8 minutes or until done

  5. Once cooked set aside

  6. Heat burrito tortillas for 20-30 second (*this will allow you to roll your burrito without it ripping)

  7. Begin assembling burritos each with egg, sausage, a hashbrown, cheese, spinach, and any other desired toppings

  8. Roll you burrito and pan fry each side

  9. To reheat roll them in tinfoil and place in the oven at 400 for 10-12 minutes or re-pan fry them in the mornings
