Ingredients:
4 eggs
⅓ cup low fat cottage cheese
1 tsp salt
½ tsp pepper
1 tsp garlic powder
1 pack chicken sausage (*I used jalapeno flavor)
1 can black beans, drained
5 hashbrowns, cooked
Shredded cheese
Spinach
5 flour tortillas
Directions:
In a large bowl whisk together eggs, cottage cheese, salt, pepper, and garlic powder
In a large skillet on medium heat scramble eggs, and set aside once done
Slice chicken sausages in half horizontally
Cook on medium heat in a large skillet for 5-8 minutes or until done
Once cooked set aside
Heat burrito tortillas for 20-30 second (*this will allow you to roll your burrito without it ripping)
Begin assembling burritos each with egg, sausage, a hashbrown, cheese, spinach, and any other desired toppings
Roll you burrito and pan fry each side
To reheat roll them in tinfoil and place in the oven at 400 for 10-12 minutes or re-pan fry them in the mornings
