Ingredients:
1 english muffin, toasted
1 egg, fried
¼ cup egg whites
3 slices canadian bacon
1 hashbrown
Shredded cheese, topping
¼ cup mixed greens
1 avocado
1 tsp lemon juice
Pinch of salt
Pinch of pepper
Directions:
In a small bowl mash together avocado, lemon juice, salt, and pepper and set aside
Heat a skillet on medium heat
Grill canadian bacon and hashbrown until cooked
Toast your english muffin to your preference
Start assembly, add a tbsp of avocado mixture to one side of the english muffin
Add greens, canadian bacon, and hashbrown on top
In the same skillet cook egg, and egg whites to your liking
Once cook add egg onto sandwich and cheese
