Yield: 5 servings: 2 tacos per serving
Ingredients:
2lbs chicken breast, cubed
1 yellow onion, diced
¾ bell pepper, diced
10 corn tortillas
Shredded cheese, topping
Marinade:
2 tbsp soy sauce
2 tsp worcestershire sauce
2 tbsp olive oil
2 tbsp garlic, minced
¼ cup green onion, minced
Juice of half a lime
Zest of 1 lime
Salsa:
¼ cup pineapple, cubed
⅛ cup corn
¼ bell pepper, cubed
1 tbsp parsley, finely chopped
Juice of half a lime
Pinch of salt
Directions:
In a large bowl combine all the marinade ingredients, along with the cubed chicken
Allow chicken to marinade in fridge for 30 minutes
While that is marinating in a small bowl combine all the salsa ingredients and set aside
Heat a large skillet on medium heat
Once pan is hot add chicken, cook for 10-15 minutes or until done depending on how large your chicken was cubed
Once cooked remove chicken from skillet and set aside
Before washing the skillet add in peppers and onions and cook until onions become translucent, about 10 minutes
Remove peppers and onions
In the same pan grill corn tortillas on each side about 3 minutes per side
Assemble tacos
