Ingredients:
1 onion, diced
1 bell pepper, diced
2lbs ground beef
6 corn tortillas, cut into strips
15oz can black beans
10oz can red enchilada sauce
12oz crushed tomatoes
13oz jasmine rice, cooked
3 tsp chili powder
1 tsp paprika
1 tsp cumin
3 tsp minced garlic
½ tsp oregano
2 tsp salt
Shredded cheese, topping
Sour cream, topping
Directions:
Heat a large skillet on medium heat
Add in onion and peppers
Cook until onions become translucent
Add in ground beef, and seasonings
Allow to cook for 8-10 minutes or until beef is cooked
Add in beans, enchilada sauce, crushed tomatoes, and rice
Let come to a simmer
Add tortilla strips and cheese on top and cover with lid for 5 minutes on low
Serve and enjoy!
