Ingredients:

  • 1 onion, diced

  • 1 bell pepper, diced

  • 2lbs ground beef

  • 6 corn tortillas, cut into strips

  • 15oz can black beans 

  • 10oz can red enchilada sauce

  • 12oz crushed tomatoes

  • 13oz jasmine rice, cooked

  • 3 tsp chili powder

  • 1 tsp paprika

  • 1 tsp cumin

  • 3 tsp minced garlic

  • ½ tsp oregano

  • 2 tsp salt

  • Shredded cheese, topping

  • Sour cream, topping

Directions:

  1. Heat a large skillet on medium heat

  2. Add in onion and peppers

  3. Cook until onions become translucent

  4. Add in ground beef, and seasonings

  5. Allow to cook for 8-10 minutes or until beef is cooked

  6. Add in beans, enchilada sauce, crushed tomatoes, and rice

  7. Let come to a simmer

  8. Add tortilla strips and cheese on top and cover with lid for 5 minutes on low

  9. Serve and enjoy!
