Ingredients:

Potatoes:

  • 1040g (about 3 lg.) sweet potatoes, peeled  & diced

  • 2 tsp salt

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp cumin

Taco Filling:

  • 264g (about 2) peppers, sliced thin

  • 2 lbs ground chicken

  • 2 taco seasoning packets

Salsa:

  • 1 tomato, cubed

  • 1 jalapeno, cubed

  • 1 can corn

  • Juice of 2 limes

  • 130g fat free cottage cheese

  • 105g black beans 

  • 8g green onions 


Directions:

  1. Preheat the oven to 400

  2. In a large bowl combine sweet potatoes, salt, garlic powder, paprika, and cumin

  3. Spray down a baking sheet and add prepared potatoes

  4. Bake for 30-40 minutes stirring occasionally

  5. Once finished baking being portioning (recipe makes 8 servings)

  6. Heat a large skillet on medium heat on the stove top

  7. Once hot, spray the pan and add ground chicken

  8. Cook chicken for 10 minutes before adding in taco seasoning and peppers

  9. Cook for another 10-15 minutes

  10. Once cooked portion the chicken mixture

  11. In a large bowl combine the rest of the ingredients to make the salsa. 

  12. Add salt to taste and portion on top of your portion
