Jalapeno Poppers

This classic appetizer with an easy twist. Each pepper stuffed with cream cheese, bacon, corn, and green onion. Topped with a crispy bubbly cheese these jalapeno poppers are the perfect amount of spice.

This classic appetizer with an easy twist. Each pepper stuffed with cream cheese, bacon, corn, and green onion. Topped with a crispy bubbly cheese these jalapeno poppers are the perfect amount of spice. 

Ingredients:

  • 6 jalapenos 

  • 1 ear corn, grilled

  • 4oz cream cheese, soft

  • ¼ cup sour cream

  • ½ cup shredded cheese

  • ⅛ cup green onion

  • ¼ cup bacon

  • 3 tbsp parsley

  • 2 tsp fresh garlic

  • ¼ tsp chipotle powder

  • ½ tsp salt

  • ¼ tsp pepper

  • Shredded cheese, topping

Directions: 

  1. Wash and dry your peppers 

  2. Grill peppers whole, letting them get a char on the outside (if you are lazy like I was and don’t want to use the grill you can place on your stove top if you have a gas stove)

  3. Set grilled peppers aside and let them cool

  4. Set a small pan on medium and let the corn cook, about 5-8 mins

  5. Set side corn and let cool

  6. Slice the peppers in half and remove the seeds

  7. Place the halved peppers on a sheet pan with parchment, or foil

  8. In a large bowl add the rest of the ingredients along with the corn, exclude topping cheese 

  9. Once combined fill the halved peppers with mixture

  10. Once all the peppers are filled top them off with shredded cheese and place the pan in the oven about 10-15 mins or until peppers are soft

  11. Once cooked, remove from the oven and enjoy!
