Ingredients:
1lb ground beef
½ yellow onion, diced
2 tbsp garlic, minced
1 tsp pepper
3 ½ tsp salt
1 ½ tsp oregano
¾ tsp basil
20oz crushed tomatoes
2 cups water
5-8 lasagna noodles, uncooked & broken up
2 cups kale, shredded
Cottage cheese, optional topping
Directions:
In a large pot on medium heat saute onions until translucent
Add in ground beef
Allow to brown for 5-8 minutes
Add in garlic, pepper, salt, oregano, basil, crushed tomatoes, water, and noodles
Allow to simmer on low for 10-12 minutes or until noodles are fully cooked
Stir in kale
Serve with dollops of cottage cheese on top
