These Maple Sage Breakfast Sandwiches are the perfect balance of sweet and savory, making them an easy, high-protein option for busy mornings. Made with fluffy eggs, savory maple sage chicken sausage, and melty cheese on a toasted English muffin, this breakfast is both satisfying and meal-prep friendly

Ingredients:

  • 6 english muffins, slightly toasted

  • 6 slices of cheese

Eggs:

  • 12 eggs

  • 1 cup cottage cheese

  • ½ tsp salt

  • ¼ tsp pepper

  • 1 tsp garlic powder

  • 1 tsp sage

Chicken Pattie:

  • 1lb ground chicken

  • ⅓ cup maple syrup

  • 1 tsp sage

  • 1 tsp garlic powder

  • Salt & pepper

Directions:

  1. In a large bowl combine all the “egg” ingredients until fully incorporated

  2. Preheat the oven to 350

  3. In a sheet pan lined with parchment pour in the egg mixture

  4. Allow to bake for 20-25 mins or until eggs are no longer runny

  5. In a separate bowl combine all “chicken pattie” ingredients

  6. Heat a large skillet on medium heat

  7. Divide pattie mixture into about 3oz rounds, adding them to the pan

  8. Allow them to brown on each side about 3-5 minutes per side

  9. Assemble breakfast sandwiches. 

  10. Store in tinfoil and reheat in the oven at 400 for 10-12 minutes
