Ingredients:
6 english muffins, slightly toasted
6 slices of cheese
Eggs:
12 eggs
1 cup cottage cheese
½ tsp salt
¼ tsp pepper
1 tsp garlic powder
1 tsp sage
Chicken Pattie:
1lb ground chicken
⅓ cup maple syrup
1 tsp sage
1 tsp garlic powder
Salt & pepper
Directions:
In a large bowl combine all the “egg” ingredients until fully incorporated
Preheat the oven to 350
In a sheet pan lined with parchment pour in the egg mixture
Allow to bake for 20-25 mins or until eggs are no longer runny
In a separate bowl combine all “chicken pattie” ingredients
Heat a large skillet on medium heat
Divide pattie mixture into about 3oz rounds, adding them to the pan
Allow them to brown on each side about 3-5 minutes per side
Assemble breakfast sandwiches.
Store in tinfoil and reheat in the oven at 400 for 10-12 minutes
