Ingredients:
¼ cup butter, softened
1 cup peanut butter
1 ⅓ cup powdered sugar
¼ tsp salt
½ cup dark chocolate
¼ cup semi-sweet chocolate
1 tbsp shortening
Directions:
In a medium bowl combine butter, peanut butter, powdered sugar, and salt
Roll dough into 2oz sized balls
Place in freezer about 10 mins or until solid
While truffles are in freezer set up a double boiler (1 pot with an inch of water over medium heat, and a smaller pan inside the larger pan)
Place the chocolate, and shortening in the small pan of the double broiler and let melt stirring every few minutes
Once melted take off heat and set aside
Take truffles out of freezer
Dip truffles into the melted chocolate and place onto cooling rack
Once dipped place back in freezer about 5 mins or until chocolate is cooled
