Ingredients:
Pickled Onions:
1 red onion
240ml hot water
220ml white vinegar
Salt
Pepper
3 tbsp brown sugar
Eggs:
24 boiled eggs, peeled
Beet Dye:
2 beets, halved
3 cups water
1 cup apple cider vinegar
3 bay leaves
1 tsp salt
Egg Mixture:
24 boiled egg yolks
2 tsp pickle juice
3 squirts brown mustard
2 tbsp mayo
Salt to taste
Garnish:
Mini cucumbers, sliced thin
Radish, sliced thin
Dill
Directions:
Combine all pickled onion ingredients in a jar and place into fridge
In a large pot bring 4 cups of water to a boil
Add in 2 dozen egg and boil with lid off for 13 minutes
Remove pot from heat and soak eggs in cold water
Peel boiled eggs and set aside
In a large pot boil all beet dye ingredients for 3-5 minutes
Remove from heat and place hard boiled eggs into dye
Place in fridge for 2 hours
Remove eggs from beet dye and halve horizontally
In a large bowl add the halved hard boiled eggs yolks along with the rest of the egg mixture ingredients
Once combined pipe or scoop mixture into hollowed boiled eggs
Top eggs with pickled onion, cucumbers, radish, and dill
Serve and enjoy!
