Ingredients:
2lbs chicken breast, cubed
Pinch of salt & garlic
7g spicy maple syrup
18ml soy sauce
5g honey
7g ginger paste
1 cup jasmine rice, uncooked
Pinch salt
½ cup water
2 cups bone broth
1 carton cherry tomatoes, diced
½ yellow pepper, diced
½ cup pineapple, diced
Pinch salt
2 tsp lemon juice
Directions:
In a large skillet on medium heat add chicken, salt, and garlic
Allow chicken to cook for 8-10 minutes
Reduce heat to low
Add in syrup, soy sauce, honey, and ginger paste
Stir till combine and remove from heat
In a medium skillet on low heat add uncooked rice and allow to toast for 1-2 minutes
Add in water, stirring until incorporated
Add in bone broth and allow to simmer on low until rice is cooked
In a small bowl add the remaining ingredients
Assemble bowl with chicken, rice, and salsa for serving.
