Ingredients:

  • 2lbs chicken breast, cubed

  • Pinch of salt & garlic

  • 7g spicy maple syrup

  • 18ml soy sauce

  • 5g honey

  • 7g ginger paste

  • 1 cup jasmine rice, uncooked

  • Pinch salt 

  • ½ cup water

  • 2 cups bone broth 

  • 1 carton cherry tomatoes, diced

  • ½ yellow pepper, diced

  • ½ cup pineapple, diced

  • Pinch salt

  • 2 tsp lemon juice

Directions:

  1. In a large skillet on medium heat add chicken, salt, and garlic

  2. Allow chicken to cook for 8-10 minutes

  3. Reduce heat to low

  4. Add in syrup, soy sauce, honey, and ginger paste

  5. Stir till combine and remove from heat

  6. In a medium skillet on low heat add uncooked rice and allow to toast for 1-2 minutes

  7. Add in water, stirring until incorporated

  8. Add in bone broth and allow to simmer on low until rice is cooked

  9. In a small bowl add the remaining ingredients

  10. Assemble bowl with chicken, rice, and salsa for serving.
